A little higher that I was hoping but I forgot
I have a birthday girl and needed ice cream
for both sides of the family! So right there you have $10.
1 bucket probably would have been enough but
we'll just have some to get us through February this way!

I did get lots of fruit and I'm hoping to be able
to get fruit like this every week!
We've decided to start snacking on fruit instead
of junk, like we sometimes do!

I blame my going over to the Pepsi deal
at CVS!! I bought 12 -12 packs for $20.

But such a great price!!!
(I know it's junk, but still!)

Anyway I'm making my goal in
February $100. again!!
It would be awesome to be able to do this
and get lots of fruit in the process!!

My "Computer Fund" has about $160.
after only 1 month! happy dance!
(this is the excess of our grocery/gas budget!)

The Tool Man


My little guys newest addiction!!
Taking out screws
He's best with a regular screw driver but
lately he's wanted the power tools.

The glow in his eye when he gets his tools...
Oh they start so young!!!



See all those screws... Yep all of those have
come out of a little kids table and chairs we
have. It's a wonder that thing is still standing!!!

He's went from cars, to stickers,
to puzzles, now this!!

I wonder what's next??

Homemade Dinner Rolls

If you think I'm bombarding you with
bread recipes, you're right!!!

2 months ago I tried my hand at this Basic Homemade Bread Recipe.
Since then I've tried many bread recipes. Once you get started it's
hard to quit! They're all soooo yummy!!
I think I'm a bread making addict!! If you missed any of them here
they are. I'll be adding more as I try more recipes!
Who knew I'd be making bread and actually loving it!! (Not me!!)

Italian Cheesy Bread, Hamburger and hot dog buns,
Homemade pizza crust, and Cinnamon Rolls,
Cinnamon Bread

I say all this to encourage you to try it. I used to
be scared of bread making and yeast too..
(little secret-- It's not scary or hard. Oh and it
doesn't take all day either!!)


Hope you don't mind here's another one,
and it was another hit at our house!!

Homemade Dinner Rolls


1 pkg. dry yeast (1 T.)
1 1/3 cup milk (105*-115*)
3 to 3 1/2 cups flour (can use whole wheat)
3 T. Olive oil (I used vegetable cuz that's what I had)
1 Tablespoon sugar
1 tsp. salt
1 Tablespoon melted butter



Directions --
Dissolve yeast in warm milk with sugar (I used a whisk)
Stir in 1 cup flour, oil, and salt. Beat until smooth.
Stir in enough remaining flour until just slightly sticky.
(May need to knead the last bit of flour in)

Cover and let rise in warm place until double about 1 hour

Heat oven to 400* degrees.
prep a 12 cup muffin pan with spray.

Punch down dough and fold over a few times.
Pinch off 1 inch balls of dough and quickly roll
in the palm of your hands.
Put 3 balls in each muffin cup.
Brush with melted butter.

Bake 12-15 minutes until light golden brown.
Immediately remove from pan

Meal Plan Monday

It's the last week of the Pantry Challenge for January.
However, I'm doing it through February too!

I'm not sure how close I'll get but as I mentioned
last week, my computer seems to be giving me
hints that it won't be long until it crashes...
So I'm saving towards a new one!!

At the end of this month I hope to have around $150.
towards it ($110. from grocery budget and $40. from
gas budget!)

Here's my plan for meals this week!

Monday -- Big Salads along with goulash (we didn't have last week)

Tuesday -- Grilled Chicken, baked potatoes, green beans, and applesauce

Wednesday -- Potato Soup in homemade bread bowls (new recipe - I'll let you know how it turns out!)

Thursday -- Daughter's 9th Birthday on Sunday so this is her choice -- Chicken Noodles with mashed potatoes, corn, and beans

Friday -- Pizza Birthday Party (for Halee and her cousin)

Saturday -- Another Pizza Birthday Party (different kind of pizza) (for Halee, and 2 cousins)

Sunday -- Beef Stew with potatoes and carrots
